Winter Sweet Potato Soup Recipe

Sweet Potato Soup is one of my special soups. Every year I look forward to slurping it down with a nice chunk of toasted bread.

Sweet Potato Soup Ingredients:

1 large red or orange yam or sweet potato, skins removed, cut into large chunks and then chopped into 1/4 inch cubes 2 tablespoons of organic extra-virgin olive oil 1/2 tsp . of salt 1/2 teaspoon of ground pepper 1 bundle of mustard greens (leafy pieces only), washed, leaves halved top to bottom, then cut across into 1/2-inch pieces 1 small yellow or white onion, peeled, thinly sliced four cloves of garlic, peeled, minced 1 tsp of mustard seeds 4 cups of vegetable stock, plus one cup of water 1 tsp of white vinegar Salt and pepper to preference

Preparation:

Heat your oven to 425 degrees. Distribute the sweet potato chunks on a lightly greased cookie sheet. Sprinkle with 2 teaspoons olive oil, salt and pepper, throwing to combine. Turkey Pot Pie Recipe:

3-4 lb turkey, diced into sections or pieces

Pie dough (recipe below)

1/4 cup of butter

Salt and pepper

1 cup whole milk (do not use non-fat milk)

4 cups of turkey stock

8″ baking dish or pie pan

Directions:

Preheat the oven to 400 degrees. Put the pieces of turkey in a big pot and add just enough water to cover the top of the turkey. Bring to a boil and then reduce the heat to med-low and slowly boil until the meat is shredding. As the turkey cooks, you may prepare the pie dough and butter the baking dish.

Cut the pie dough in half and then roll out one half to just about 1/8 inch thick. Gingerly place the rolled out dough in the bottom of the dish. If there is any leftover dough, cut it from the edges of the dish and reserve.

Place shredded turkey in the pan as well as the remaining pie dough. If possible, layer the turkey and the remaining pie dough. Pour in the milk and evenly distribute with two tbsp of the butter. Sprinkle with salt/pepper to taste.

To Prepare:

In a large mixing bowl, combine the flour and salt and then work the butter lightly into
the flour using either two forks or a pastry blender. When the flour mixture resembles coarse meal, slowly pour in the ice water and combine just until the pie dough can hold together. Don’t over mix, or else the pie dough will get “gummy”. Cover in plastic wrap and chill in the fridge for 60 min in order to “relax”.
